Fresh crab meat

1 cup of heavy cream

4 Egg Yolks

2 tablespoons of Granulated sugar

Butter

Fresh herbs

Salt and Pepper

Instructions

Prepare Crab Filling: Warm 1 cup heavy cream, whisk 4 egg yolks with 2 tbsp sugar, combine with cream, cook on low until thick, then fold in 1.5 cups crab meat. Season with salt and pepper.

Assemble Brulee: Preheat oven to 325°F, butter 4 ramekins, divide crab mixture evenly, and smooth tops. Place ramekins in a baking dish, adding hot water halfway up the sides.

Bake: Bake at 325°F for 25-30 minutes, until edges are set and the center is slightly jiggly. Cool to room temperature, then chill for at least 2 hours.

Caramelize Sugar: Sprinkle 2 tsp sugar on top of each brulee, use a kitchen torch or broiler to caramelize the sugar until golden.

Garnish & Serve: Let the sugar set, then garnish with chopped herbs and serve immediately with a side salad or vegetables.

Notes

Prevent Curdling: When mixing hot cream and egg yolks, make sure to pour it slowly and continuously whisk. This gentle mixing, referred to as tempering, stops the eggs from boiling too fast and becoming lumpy.

Avoid Over-Caramelizing: If you are using broilers or a kitchen torch make sure you watch the sugar carefully to prevent it from burning. The goal is a golden brown cake, but not a scorched one.
